The history of the Cannellino is lost in time, just think that already on some treaties of the eighteenth century the praises of this sweet white wine were defined: the kind and graceful wine of Frascati. Produced exclusively with Malvasia Bianca di Candia and Malvasia del Lazio grapes (plus an addition of other local varieties) harvested late, thanks to the mild autumns of the Castelli district that favored keeping it on the plant, it was so called because it was used to being drunk from the cannella, the copper straw that came out of the wooden barrel; this white, light and lovable wine that, until just over a century ago, was kept in small vats, was used to being drunk during the summer, when the temperature range between the cellar and the outside, triggered a new fermentation, making it sparkling. Served fresh you would never stop drinking it!
Light straw-colored with greenish flashes, it reveals a nose characterized by floral and fruity aromas of ripe pear and wisteria, wrapped in honeyed sensations. Taste sweetish as per tradition, fresh and delicate.
Perfect with small pastries and with the maritozzi with cream, or with the semi-aged Roman pecorino.
