The story tells that in 1111 Johannes Defuk, bishop at the court of Henry IV of Germany, was traveling to Rome to receive the crown of the Holy Roman Empire from Pope Pascal II; being a keen connoisseur of wines, he used to send forward his cup bearer, to look for and taste for him the best wines of every place they went through. They had decided that, if he had found some good wine, he would have to write on the door of the tavern EST (or C'E '), if it had been very good EST EST. When he arrived in Montefiascone, the cup-bearer was so impressed by the goodness of the local wine that he repeated the word three times, reinforcing it with several exclamation points. Est! Est!! Est!!! Fruit of the union of three local grapes: Roscetto, Malvasia and Trebbiano, it is a fresh and fruity wine that has always represented the tradition of white wines from Lazio.
Straw yellow with bright greenish reflections, the nose has hints of tropical fruit, pineapple, banana and white peach, along with jasmine flowers, aromatic herbs and salty notes. Soft and balanced on the palate, it is supported by the right balance between freshness and flavor, which make the taste pleasant and full of citrus flavors.
Ideal companion for dishes based on fish, pasta with vegetables and white meat sauces.
