Unlike the southern regions, in central Italy the production and consumption of wine spread with some centuries of delay. The viticulture of Lazio today refers mainly to two production areas: The Roman castles and the Viterbese. The Lazio wines are mainly white: Among these the Malvasia del Lazio and the Malvasia bianca del Candia and the Trebbiano which give origin to wines like Frascati, Frascati Superiore, Montefiascone and Grechetto. Among the red grapes, in addition to Montepulciano, Merlot and Cabernet Sauvignon stands out the Cesanese native vine, the base of wines of absolute excellence.
