Ribolla Gialla is one of the oldest vines in Friuli, already known by the Romans as "evola"; a wine produced exclusively in the hills of Friuli, because the microclimate and the hilly terrain are able to allow the perfect maturation of all organoleptic characteristics. The main characteristic of Ribolla is its strong acidity that, in the past, brought the wine to "boil" in the carboy, and this is, above all, its strength thus defining an immediate (but not only) wine that can reserve elegant surprises in time.
Bright straw yellow with greenish reflections, it has a delicate and floral scent of acacia and jasmine, along with notes of medlar, white peach and citrus fruit playing with plant and mineral hints. The gustative sensation is soft and elegant, expressing a soft and delicious taste balance, well balanced between freshness and flavor, in an almost creamy complex that leaves room for a long mineral trail.
Ideal with San Daniele raw ham, raw fish, vegetarian and first courses of fish, such as shrimp and zucchini gnocchetti.
