This maison, among the best known in Champagne, has been producing excellent wines for more than five hundred years using simple and traditional vinification methods, with few interventions and guided by the principle that wine is made in the vineyard and not processed in the cellar. This cuvée is produced with grapes from Premier and Grand Cru vineyards and with 25% of vin de réserve aged in wood and with a masterful Brut dosage; it faithfully reproduces the unmistakable style Philipponnat, focused on the perfect balance between the acidity of Pinot Noir and the minerality of Chardonnay.
Salmon pink with golden glow with a fine and persistent perlage, it has initial aromas of small red fruits of strawberries and cherries, then pink grapefruit, aromatic herbs, orange honey and pain-grillé, on a chalky mineral base. Elegant and full on the palate, it invites the sip with good acidity and astringency from the fruity and citrus returns.
To accompany fish and smoked meats to perfection, white meats and, why not, dessert with berries.
